Zucchini Casserole for Dad’s Birthday Dinner

We are having a birthday celebration dinner for dad and I am going to help.  We have a lot of zucchini in our garden, so I am going to make a zucchini casserole as the side dish.  My niece, Haley is here to help.

Ingredient List:

2 pounds of zucchini

2 eggs, beaten

15 Ritz crackers

1 cup grated, sharp cheddar cheese

1 medium onion, chopped

salt and pepper to taste

Equipment List:

large stock pot

casserole dish

cutting board

rolling pin, knife, potato masher, spoon

Preheat the oven to 350 degrees

Fill a large stock pot halfway with water.

Add 2 teaspoons of water, turn on to medium-high and bring water to a boil.

Wash the zucchini

Slice the zucchini

Place the zucchini in boiling water and cook for 5 minutes.

Crack 2 eggs in a small bowl and beat with a fork.

Chop the onion.

Place the crackers on the cutting board, cover with wax paper and crush with a rolling pin.

Drain the zucchini

Return the zucchini to the pot; add crackers, onion, egg and 1/2 cup of the cheese, mix

Place the zucchini mixture in a casserole dish and add the other 1/2 cup cheese on top.

Place in the oven and bake 20 minutes.
