Toasted Coconut and Macadamia Nut Meltaway Shortbread Cookies

These cookies are really easy to make, everything mixes in the food processor!  They are buttery and melt in your mouth.

Ingredients:

2 cups flour

1/2 teaspoon salt

1/3 cup powdered sugar

1 teaspoon vanilla

1 cup (2 sticks) unsalted butter, softened

1 teaspoon water

1/2 cup macadamia nuts

1 1/2 cups flaked coconut

Preheat the oven to 375 degrees.  Place the following ingredients in a food processor: 2 cups flour

1/2 teaspoon salt and  1/3 cup powdered sugar

1 teaspoon vanilla

Cut the butter into cubes and add to the food processor

Add the water and the macadamia nuts.

Place the lid on the processor and pulse until a dough forms

Wrap the dough in plastic wrap or wax paper.  Put in the refrigerator for 30 minutes

Form a log with the dough, unwrap and place on a cutting board.  Slice cookies about 1/3 inch diameter.

Roll the cookies in coconut and place on a baking sheet lined with parchement paper.

Bake the cookies 12-14 minutes in a 375 degree oven

Allow to cool on a cooling rack.  Enjoy!
