Artichoke Nibbles

Megan is making the appetizers for Easter dinner this year.  I found this recipe in my retro recipe box.  It looked easy so we gave it a try and it came out great!


2 small jars marinated artichoke hearts

1 small onion, chopped fine

4 eggs

1/4 cup bread crumbs

1/4 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon oragano

1/8 teaspoon hot pepper sauce

1/2 pound sharp cheddar cheese, grated (about 2 cups)

Drain the marinade from the artichokes into a small saute pan.

Finely chop a small onion

Add the onion to the saute pan and cook on medium high for 5 minutes.

Beat together in a large bowl, eggs, bread crumbs, salt, pepper and oregano.

Chop the artichokes and add to the bowl


Add the hot sauce….

and the cheese

Stir all the ingredients together.

Spoon and spread into a small, lightly greased baking pan

Bake in a 325 degree oven for 30 minutes.

This can be a do ahead dish.  To warm, reheat 10-12 minutes in a 325 degree oven.
