Ravioli with Bread Crumbs and Cheese

We found this recipe in one of my cookbooks “Take it Easy” by the Deen Brothers.  This is an easy, quick meal that is great for a week night dinner.


16 ounces fresh ravioli

1 stick unsalted butter

1/2 cup seasoned Italian bread crumbs

1 cup Parmeasan cheese or Pecorino Romano

Pinch salt


Fill a large pot with salted water.  Bring to a boil and add ravioli.  Cook according to package directions.

Melt the butter in a large skillet over medium high heat.


When the foam from the butter is mostly gone, add the bread crumbs, 1/4 cup of the cheese and salt.  Stir together.

Drain the ravioli, then add to the saute pan.  Toss all together to warm through.


Transfer to a serving bowl and sprinkle the remaining 1/4 cup of cheese over the top and serve.

It sounds so simple, but it really is delicious.
