There is nothing low cal about this dish, but boy is it good!
1 8-ounce tub mascarpone cheese
1 small jar pimiento cheese
2 cups grated swiss cheese
1 cup mayonaise
2 teaspoons grated onion
1/2 teaspoon salt
Ground pepper to taste
8 ounces elbow macaroni
1 cup grated pecorino romano cheese
1 cup diced ham
Fill a large pasta pot with water, add salt. Place on the stove and bring to a boil.
In a food processor place, mascarpone cheese, pimiento cheese,swiss cheese, mayonaise, grated onion salt and pepper.
Process until smooth and mixed.
When the comes to a boil, add the macaroni, cook for 9 minutes.
Drain the macaroni and place in a large bowl. Add the cheese mixture, mix together well.
Add the ham and mix together.
Place the macaroni and cheese in a greased baking dish. Sprinkle grated pecorino romano over the top.
Place in a preheated 400 degree oven and bake 20 minutes.
Dinner is ready!!!
