Buffalo Chicken Salad

Here is an easy summer salad.  You can grill it on a pannini, put it in a pita pocket or on a salad.

2 cups of cooked chicken, cut into bite-size pieces

2 celery stalks, chopped

Mayonnaise

1/2 cup Feta or Blue Cheese

Wing sauce

DSC01827Chop the chicken into bite-size pieces.  We used rotisserie chicken.

DSC01828Chop the celery into bite-size pieces.DSC01830Place the chicken and celery in a bowl.  Add cheese.  Stir in enough mayonnaise to make the salad hold together.

Megan’s Super Grilled Cheese Sandwich

Megan thought of this sandwich combination the other day.  We tried it for lunch with a cup of soup.  It was really good!

for 1 sandwich

2 slices sourdough bread

Goat cheese

Cranberry sauce

4 slices thin sliced turkey

1 slice Swiss cheese

1/2 apple, thinly sliced

olive oil for grilling

DSC01764Spread goat cheese on both slices of bread.

DSC01765Add cranberry sauce to one side

DSC01766To the same side, add Swiss cheese, apple and turkey slices.

DSC01768Place the sandwich top on and brush both sides with olive oil.  Grill the sandwich until the cheese is melted.

Turkey Cranberry Pinwheels

These pinwheels are great for lunch.  They also make a good appetizer.  These are the basic ingredients we used.  You can use anything you like in a sandwich.

Flavored tortilla wraps

Softened cream cheese

Cranberry Sauce

Turkey slices

Lettuce or sprouts

DSC01753Spread cream cheese over the entire surface of the tortilla.

DSC01754Spread cranberry sauce on the bottom half of the tortilla.

DSC01755Cover with turkey slices leaving the top with only the cream cheese.  That is the glue that holds the pinwheel together.

Chicken and Waffles with Blackberry Chipotle Spread

Here’s an easy supper.  We use Pillsbury Biscuits to make the waffles, cooked, breaded chicken strips.

1/2 cup mayonnaise

1/2 cup blackberry jam

1/2 teaspoon smashed chipotle in adobo

4 frozen, breaded chicken strips

1 can Pillsbury Grands Biscuits

4 slices Swiss cheese

DSC01590In a small bowl, mix together, mayonnaise, blackberry jam and chipotles.

DSC01592Spray a waffle iron with non-stick spray.  Sprinkle flour onto a cutting board.  Place one of the biscuits on the board and roll out the size of one waffle square.  Repeat with other biscuits.

DSC01593Place rolled biscuits on the waffle iron and bake until golden, about 2 minutes.  Remove and repeat with remaining biscuits.

DSC01595Place chicken strips in the microwave and cook according to package directions.  Assemble waffles by spreading blackberry chipotle spread on each waffle.  On one side, place a slice of cheese, chicken and waffle top.

DSC01599Place waffle sandwiches on a panini grill and cook until cheese melts.

Directions:

Pastrami Reuben Sandwiches

Here is an easy sandwich we made for dinner last night.

Ingredients:

1/2 cup mayonnaise

2 Tablespoons catsup

1 teaspoon pickle relish

1 teaspoon capers

1 15 ounce can saurkraut

4-6 slices bread, rye or sourdough

1/2 pound pastrami (we used turkey pastrami)

Sliced Swiss cheese

Mix together mayonnaise, catsup relish and capers.

Spread on both sides of the sandwich.

One one half of the sandwich, place 4-5 slices of pastrami.

Add slices of Swiss cheese over the pastrami.

Follow with saurkraut.

Place the sandwich tops on and brush both sides with olive oil.

Grill sandwiches until the cheese melts and bread is toasty.

Remove from the grill, slice in half and serve!

Grilled Cheese with Canadian Bacon and Apple

Megan made-up this sandwich.  We tried it with both Canadian Bacon and sliced turkey.  Both are delicious!

Ingredients:

1 slices of sourdough bread

mayonnaise and Dijon mustard

2 slices of Canadian Bacon

3-4 wedges of Manchego cheese

thinly sliced apple

olive oil for grilling

Mix mayonnaise and mustard together in a small bowl.

Spread on both pieces of bread.

Build the sandwich on one side of the bread starting with the Canadian Bacon.

Next, add the Manchego cheese.

Cover the cheese with thin slices of apple.  We used a mandolin to get thin slices.

Brush olive oil on both sides of the sandwich.

Grill the sandwich until the cheese is melted and the bread is well toasted.  We used our panini grill, but a grill pan or saute pan on the stove works also.

Slice in half and enjoy!

Steak and Pepper Panninis

We had a lot of left over tri tip steak from our Sunday dinner.  We are making grilled pannini sandwiches with the left over steak. Put it with a cup of butternut squash soup and there’s dinner!

Ingredients:

Thinly sliced steak or roast beef

1 onion, thinly sliced

1-2 yellow or red bell peppers

4 french rolls, sliced in half

1/2 cup mayonnaise

2 Tablespoons prepared chimichurri spread

cheese of your choice

Place about 1 Tablespoon of olive oil in a large saute pan.  Add the onions and peppers, cook until soft, about 4-5 minutes.

Add the steak, warm through.  Lower the heat to simmer.

Prepare a spread by combining mayonnaise with chimichurri spread.

Spread on both sides of the roll.

Spoon steak with onions and peppers on one side of each roll.

Place a slice of cheese on each sandwich.  Place tops on.

Grill sandwiches on a pannini grill or a grill pan on the stove with something heavy like a cast iron skillet to press it down.

Dinner is ready!!

Steak Fajita Quesadillas

We had some leftover grilled carne asada from dinner last night.  Meg and I decided to make a lunch quesadilla with the grilled steak.  You could also substitute cooked chicken and it would be just as delicious.

Ingredients:

1 large tortilla wrap

2-3 slices cheese of your choice

Grilled steak (thinly sliced) and peppers

2-3 Tablespoons salsa

Sour cream or guacamole garnish

Place cheese slices over one half of the tortilla.

Cover the cheese with the cooked steak and peppers.

Spoon salsa over the steak.

Fold the tortilla in half .

Place on a panini grill or grill pan and cook until the cheese melts.

Cut the quesadilla into triangles.  Serve with sour cream or guacamole garnish.

Mediterranean Naan Bread Pizzas

Megan came out this morning and told me she dreamed about this sandwich!  She made this up all by herself, so proud of her!

Ingredients:

2 Naan breads

6 ounces goat cheese

1 jar Mezzettas Mediterranean Olive Spread

25-30 slices salami

1 green bell pepper, chopped

1 cup kalamata olives, chopped

1 cup feta cheese

 

Place Naan breads on a cookie sheet

 

Spread goat cheese then olive spread on the Naan bread.

 

Cover with salami slices….

 

Next add bell pepper, then olives.

 

Sprinkle crumbled feta cheese over the top.

 

Place under the broiler for about 5 minutes, until browned on top.

 

Ta da! Yummmm!

Summer Tomato Basil Bruschetta with Grilled Steak

There’s nothing better than bruschetta with vine ripened summer tomatoes and fresh basil.  They are easy and delicious.  We added some grilled steak for a tasty lunch.

Ingredients:

8-10 slices of artisan french bread

butter or olive oil for grilling the bread

3 fresh tomatoes, chopped

1/3 cup fresh basil, chopped

2 Tablespoons olive oil

splash of red wine vinegar

salt and pepper to taste

8-10 slices of grilled steak

1/2 cup grated pecorino romano cheese

 

Brush both sides of the bread with melted butter or olive oil.  We had some compound lemon basil butter and used that.

Chop the tomatoes and basil.

Haley was over helping Auntie Megan cook today!

Place the tomatoes and basil in a bowl.  Add olive oil, a splash of vinegar and salt and pepper.  Stir to combine.

 

Place the bread on a grill pan.  Toast until grill marks appear, 2-3 minutes on each side.  Add the steak slices also to warm them up.

 

Remove the bread to a plate, then place steak slices on top.

Spoon tomato and  basil mixture on top of each bread slice.

Sprinkle grated pecorino romano cheese over the top of all and serve.
