Sauteed Apples and Cider Sauce for Pork Tenderloin

We made a trip to Apple Hill a couple of weeks ago.  We have lots and lots of apples to use up!  This sauce was delicious over our pork tenderloin last night.


2-3 apples, peeled, and cored

2 Tablespoons butter

1 cup chicken stock

2/3 cup apple cider

1/2 teaspoon cornstarch

1 Tablespoon water

2 teaspoons apple cider vinegar

salt and pepper

DSC01638After the apples have been peeled and cored, slice them

DSC01639Melt butter into a large saute pan and add the apples. Cook for 5-7 minutes until browned.

DSC01641Remove the apples slices to a bowl.

DSC01642Add the chicken stock and apple cider to the saucepan.  Mix the cornstarch and water to make a slurry.  Add to the saucepan and cook until reduced in half.

DSC01643If the sauce doesn’t thicken enough, add a little more cornstarch/water mixture.  Remove from heat and add the vinegar, salt and pepper.   Place the apples back in the sauce and keep warm until ready to serve.

DSC01644Slice the pork tenderloin and pour the apples and sauce on top.

Curried Pasta Salad

We found this recipe in Sandra Lee’s Semi-Homemade Cooking.  Here’s another easy summer salad.


3/4 cup sour cream

2 teaspoons curry powder

1 8-ounce can pineapple chunks

1 avocado, peeled, pitted and cut into chunks

1 red apple, cored and chopped

8 ounces bow tie or farfale pasta

1 teaspoon salt or to taste

DSC01560Blend together the sour cream and curry powder.

DSC01561Core and chop the apple into chunks.

DSC01562Drain the pineapple.  Chop the peeled avocado into chunks.  Add apple, pineapple and avocado to a large bowl.

DSC01563Add the dressing and mix together well.

DSC01564Bring a large pot of salted water to a boil.  Add the pasta and cook according to package directions.

DSC01565Drain and rinse with cold water in a colander.

DSC01566Mix the pasta into the salad, add salt.  Chill for about 15 minutes before serving.



In a large bowl, mix sour cream and curry powder.  Chop apple and avocado.  Drain pineapple and place all in a large bowl.  Add the dressing and mix together.

Bring a large pot of salted water to a boil.  Add the pasta and cook according to package directions.  Drain and rinse with cold water.  Add pasta to the salad along with salt; mix well.  Chill in the refrigerator about 15 minutes before serving.

Grilled Cheese with Canadian Bacon and Apple

Megan made-up this sandwich.  We tried it with both Canadian Bacon and sliced turkey.  Both are delicious!



1 slices of sourdough bread

mayonnaise and Dijon mustard

2 slices of Canadian Bacon

3-4 wedges of Manchego cheese

thinly sliced apple

olive oil for grilling


Mix mayonnaise and mustard together in a small bowl.


Spread on both pieces of bread.


Build the sandwich on one side of the bread starting with the Canadian Bacon.


Next, add the Manchego cheese.


Cover the cheese with thin slices of apple.  We used a mandolin to get thin slices.


Brush olive oil on both sides of the sandwich.


Grill the sandwich until the cheese is melted and the bread is well toasted.  We used our panini grill, but a grill pan or saute pan on the stove works also.


Slice in half and enjoy!

Apple Muffins with Streusel Topping


These are delicious for a weekend breakfast or brunch.


Muffin batter:

1 1/2 cups flour

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon baking soda

1/4 teaspoon salt

2 eggs

1 cup sour cream

1/4 cup unsalted butter, melted

1 cup diced fresh apple, skins on

Streusel Topping:

1/2 cup chopped walnuts

1/4 cup flour

4 Tablespoons sugar

3 Tablespoons unsalted butter at room temperature

1/2 teaspoon cinnamon

Preheat the oven to 375 degrees. Grease the muffin tins or place cupcake papers in the tin.

Sift into a large bowl the dry ingredients: 1 1/2 cups flour


baking powder…

and the rest of the dry ingredients…cinnamon, nutmeg, baking soda and salt.

Sift all into a large bowl.

In a separate bowl, place the eggs, sour cream and melted butter.  Stir well.

Dice the apples

Stir the apples into the wet ingredients.

Combine the wet and dry ingredinets well.

Spoon into muffin tin using a 1/4 cup measuring cup.

In a medium bowl, place the ingredients for the topping.  Work with your fingers until they resemble large oatmeal flakes.

Top each muffing with the topping

Bake for 20 minutes

Remove from the oven and cool for about one hour.

Fresh Apple Cake …..A trip to Apple Hill

We had a great time this week on our trip to Apple Hill.  We brought back lots of fresh apples and cider.  This week we are making a Fresh Apple Cake from the apples we picked.

Ingredient List:

2 eggs

2 cups sugar

1 cup oil

2 teaspoons vanilla

4 cups chopped, unpeeled apples (about 5 medium apples)

3 cups flour

2 teaspoons cinnamon

2 teaspoons baking soda

3/4 teaspoons salt

1 cup chopped walnuts or pecans

 Preheat your oven to 350 degrees.  In a large mixing bowl, add 2 eggs

Add 2 cups of sugar and 1 cup of oil

and 2 teaspoons of vanilla

Mix all these ingredients together with an electric mixer

Now we need to prepare the apples.  First cut the apple in half.

Cut each half into quarters to the side of the core. Lay the apple on its side and cut out the core.

Now make thin slices.

Stack the slices and cut in the other direction to make cubes.

Add the apples to the cake batter and mix in.

Place the dry ingredients in a sifter; 3 cups flour, 2 teaspoons cinnamon, 2 teaspoons baking soda and 3/4 teaspoon salt.

Sift these ingredients into the cake batter.

Add the nuts and mix all ingredients together well.

Spray a 10×12 baking pan with cooking spray.

Add the batter and spread all over the pan.  The cake batter will be very thick.

Place in a 350 degree oven and bake 40 minutes.

This cake has a yummy cream cheese frosting, here are the ingredients:

1 cube unsalted butter, softened

6 ounces of cream cheese, softened

2 cups powdered sugar

1 teaspoon vanilla

zest from 1 orange

Place all ingredients in a bowl.  Use a microplane or grater to add orange zest. Mix all together well.

After the cake has cooled, place frosting on the cake and spread to cover entire cake.
