1 3/4 cups flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup applesauce
1 cup mashed very ripe bananas (about 2)
2 eggs, slightly beaten
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans
Preheat oven to 350 degrees. In a large mixing bowl, blend the first five ingredients:
flour, sugar, baking powder, salt and baking soda
In a separate bowl, mash the bananas with a fork. Add the applesauce.
Beat the eggs separately. Add it to the banana mixture.
Blend it with the dry ingredients.
In this variation of our original banana bread recipe, we decided to add chocolate chips and pecans.
Fold in to the bread batter.
Prepare a large loaf pan by greasing with shortening or cooking spray. Pour batter into the loaf pan.
Bake in preheated oven 55-60 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool before cutting.
Megan wanted to try to make a banana cream pie. With help from already prepared foods, this turned out to be an easy, doable recipe for her to make.
1 ready-made pie crust
1 small box vanilla pudding
2 3/4 cups milk
Non-Dairy whip topping
Preheat oven according to package directions for the pie crust. Combine pudding mix and milk in a medium saucepan over medium-high heat.
Bring pudding to a boil. Pudding should be thickened at this point. Allow it to cool.
Unroll pie dough into a 9 inch pie pan. Crimp the edges and prick crust with fork to prevent the crust from shrinking. Cook about 12 minutes or until golden brown. Remove from the oven and let it cool down.
Slice the bananas and cover the crust.
Spoon pudding over the bananas to cover.
Repeat with more sliced bananas and the rest of the pudding.
Cover with whip topping. Allow the pie to cool 2-3 hours before serving.
Megan surprised us Sunday with this delicious smoothie. We had been working hard in the the yard, putting up rabbit fencing, staking grapes, fertilizing plants. We were hot and tired and she made this smoothie for us! It was such a welcome surprise!
2-3 fresh strawberries
1/3 cup frozen mixed berries
1/2 cup vanilla yogurt
1 Tablespoon honey
1/2 cup Italian Blood Orange Soda or orange juice
1 cup ice
Slice the strawberries, put in a blender along with the frozen berries.
Peel and slice the banana into chunks. Place in the blender.
Now, add the rest of the ingredients; yogurt, blood orange soda, honey, and ice.
Put the lid on the blender and turn on. Blend until smooth.
Pour into glasses and serve. What a refreshing, healthy summertime treat!
