Breakfast Burritos

1 package large tortilla wraps

4 eggs

1 package of frozen or fresh hash brown potatoes

ham, bacon or sausage

Shredded Mexican cheese mix

Salsa

Hot sauce, avocados (optional)

DSC01810Prepare eggs in a large mixing bowl.  Add a splash of milk, salt and pepper.

DSC01811Cook hash browns with a tablespoon of oil in a large saute pan over medium-high heat.

DSC01813When the potatoes are browned, push to one side and add the eggs.

DSC01814In a separate pan, cook desired breakfast meat.  We had some ham and sausage on hand.

DSC01815Start building the burritos.  Place a spoonful of potatoes close to one edge of a warmed tortilla.

DSC01817Add meat and eggs, cheese, hot sauce or salsa if desired.

DSC01818Start rolling by folding in the sides first.

DSC01820Continue rolling, keeping ingredients from falling out.

DSC01821Garnish with sliced avocados, salsa and sour cream.  These burritos can be made ahead and frozen.

Super Nachos

We had a mini Cinco de Mayo dinner the other night.  We made nachos with some left over turkey and margaritas to go with it.

2 cups cooked turkey or chicken, chopped

1 8 ounce block cream cheese

1 cup salsa verde

1 can black beans

tortilla chips

1 bag shredded Mexican style cheese -8 ounce

salsa

sour cream and chopped avocados for garnish

DSC01801Using a Kitchenaid mixer or hand mixer, blend meat, cream cheese and salsa verde until the meat is shredded.

DSC01802Preheat oven to 375 degrees.  Cover a large cookie sheet (9×13) with tortilla chips.  Add the black beans evenly over the chips.

DSC01803Add spoonfuls of the meat mixture as evenly as possible.  You may need to use your hands to spread the mixture.

DSC01804Cover all with shredded cheese.  Place in the oven for 20 minutes.

DSC01805Remove from the oven and add garnishes; salsa, sour cream and avocado.  Serve immediately.

Quick and Easy Individual Flatbread Pizzas

Megan wanted to make pizza for lunch the other day.  We wanted to try and use ingredients we had on hand,

and this is the pizza we came up with.

One flatbread for each serving

Prepared pesto sauce

Slices of ham and salami

Grated cheese

DSC01633Preheat the oven to broil.  There aren’t any measured ingredients for this, just put on the amount you desire.  First, spread the pesto sauce over the entire flatbread.

DSC01634Add cut-up ham and salami.

DSC01635Sprinkle grated cheese over all.

DSC01636Place under the broiler 1-2 minutes until brown and bubbly.

DSC01637Remove from the oven, cut into quarters and serve immediately.

Green Chili Carnitas Nachos

This is one of those “make it up as you go” recipes.  We don’t really have exact ingredients because you can add or delete ingredients you like on your nachos.

2 cups cooked pork carnitas meat or any cooked meat you desire

1 8-ounce cream cheese

1 cup green chili salsa

1 bag of tortilla chips

1 8-ounce bag shredded Mexican cheese blend

Toppings:

Guacamole

Salsa

Tomatoes

Green onions

Sour cream

DSC01582Take the first 3 ingredients: cooked meat, cream cheese and green salsa…

DSC01583Place all in a mixing bowl.  Using an electric mixer, mix ingredients together, shredding the meat.

DSC01584Preheat the oven to 375 degrees.  Cover a large baking sheet with tortilla chips.  Spoon meat mixture on top.

DSC01585Sprinkle shredded cheese over the top.  Place in the oven for 20 minutes.

DSC01587While the nachos are in the oven, work on the toppings.  We made a quick guacamole with fresh avocados, lemon juice, jalapeno, onion and tomato.  You can also use ready made guacamole.

DSC01588Remove nachos from the oven.  Add desired toppings: we put on salsa, fresh tomatoes, green onion, guacamole and sour cream.

Turkey, Tomato and Monterey Jack Bake

This is a recipe we found in one of our favorite cookbooks, Take It Easy by the Deen Brothers.

We put our own spin on it with a couple of ingredients.

Ingredients:

2 Tablespoons olive oil

1 pound ground turkey

1 medium onion, chopped

1 can nacho cheese soup

1 cup canned diced tomatoes

1 can kernel corn

1 -4 ounce can chopped mild green chilis

1 teaspoon salt

2 cups grated Mexican cheese blend

2 cups crushed corn chips

DSC01432 Preheat the oven to 400 degrees

Chop the onion.

DSC01434Place the oil in a large saute pan and turn the heat to medium high.  Add the onions.

DSC01436Add the ground turkey and cook together about 5 minutes or until no pink remains.

DSC01439Add the soup, tomatoes, corn, chilis and salt.  Bring the mixture to a boil.  Cook for 5 minutes, stirring constantly.

DSC01440Crush the corn chips with a rolling pin.

DSC01441Transfer the meat mixture to a casserole dish.  Sprinkle the cheese over the top.

DSC01442Add the crushed corn chips over the chips.  Bake in the preheated oven 10-15 minutes.

Serve immediately.

English Muffin Egg Sandwich

Meg loves egg sandwiches for breakfast.  Here’s a recipe for a muffin sandwich she likes to make.

Ingredients:

English Muffins (one per sandwich)

One egg per sandwich

One slice bacon or 1 sausage per sandwich

One slice cheese of your choice per sandwich

On a grill pan or a frying pan, fry the bacon on both sides until crisp or brown the sausage.

Fill an egg poaching pan 1/2 way up with water and bring to a boil.  Add poaching cups that have been sprayed with non-stick spray.  Crack eggs into the cups, sprinkle with salt and pepper.  Place a lid on the pan and cook egg to according to how you like it.  Place English Muffins in the toaster, remove and butter both sides.

Build the sandwich by placing bacon or sausage on one side of the muffin.

Place cooked egg on top of meat, followed by a slice of cheese.  Melt cheese in the microwave for a few seconds.

Add other half of the toasted muffin on top and serve.

French Bread Pizza

Ingredients:

One French bread roll, cut in half

1 jar of pizza sauce

1 bag of shredded pizza cheese blend

salami slices

mushroom slices or toppings of your choice

Preheat oven to broil.  Spread pizza sauce on each half of the roll.

Sprinkle cheese on the rolls to cover.

Cut the salami into bite-size pieces and add on top.

Place on a baking sheet and put under the broiler 4-5 minutes until the cheese is melted and bubbly.

Serve immediately

Biscuit Waffle Breakfast Sandwich

This is an easy, hearty breakfast sandwich made with canned biscuits baked on a waffle iron.

Ingredients:

2 buttermilk biscuits (We used biscuits in a can)

1 egg

1-2 sausage links

1 slice of cheese of your choice

Tomato or avocado slices

Plug in the waffle iron and spray with non-stick spray.  Roll out each biscuit to the diameter of each waffle square on the iron.

Place the biscuits on the waffle iron, close and allow to cook until golden brown.  Our iron took about 2 minutes, remove and set aside.

Cook the sausage either in the microwave or on the stove.

Mix together in a small bowl, egg, splash of milk and some salt.

Scramble the egg, cooking over medium-high heat.

Butter one side of the biscuit waffles.

On one side, place a slice of cheese, tomato and sausage links.

Add the scrambled egg on top. Place the other biscuit on top.  At this point we placed the sandwich on a panini grill to melt everything together.

Grilled Cheese with Canadian Bacon and Apple

Megan made-up this sandwich.  We tried it with both Canadian Bacon and sliced turkey.  Both are delicious!

Ingredients:

1 slices of sourdough bread

mayonnaise and Dijon mustard

2 slices of Canadian Bacon

3-4 wedges of Manchego cheese

thinly sliced apple

olive oil for grilling

Mix mayonnaise and mustard together in a small bowl.

Spread on both pieces of bread.

Build the sandwich on one side of the bread starting with the Canadian Bacon.

Next, add the Manchego cheese.

Cover the cheese with thin slices of apple.  We used a mandolin to get thin slices.

Brush olive oil on both sides of the sandwich.

Grill the sandwich until the cheese is melted and the bread is well toasted.  We used our panini grill, but a grill pan or saute pan on the stove works also.

Slice in half and enjoy!

Steak and Pepper Panninis

We had a lot of left over tri tip steak from our Sunday dinner.  We are making grilled pannini sandwiches with the left over steak. Put it with a cup of butternut squash soup and there’s dinner!

Ingredients:

Thinly sliced steak or roast beef

1 onion, thinly sliced

1-2 yellow or red bell peppers

4 french rolls, sliced in half

1/2 cup mayonnaise

2 Tablespoons prepared chimichurri spread

cheese of your choice

Place about 1 Tablespoon of olive oil in a large saute pan.  Add the onions and peppers, cook until soft, about 4-5 minutes.

Add the steak, warm through.  Lower the heat to simmer.

Prepare a spread by combining mayonnaise with chimichurri spread.

Spread on both sides of the roll.

Spoon steak with onions and peppers on one side of each roll.

Place a slice of cheese on each sandwich.  Place tops on.

Grill sandwiches on a pannini grill or a grill pan on the stove with something heavy like a cast iron skillet to press it down.

Dinner is ready!!
