We’ve been enjoying our Wednesday morning trips to the farmer’s market in town. This week we bought some beautiful fresh peaches, came home and made a crisp with them,
4 fresh peaches, peeled, pitted and sliced
2 fresh plums, pitted and sliced
1 teaspoon vanilla extract
1 cup flour
1 cup white sugar
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup quick cooking oats
1/2 cup unsalted butter
Prepare the fruit by peeling the peaches, pulling out the pit and slicing. Take the pit out of the plums and slice.
Preheat oven to 375 degrees. Place the sliced peaches and plums in a baking dish that has been sprayed with non-stick spray. Sprinkle the vanilla over the top.
In a large bowl combine: flour, white sugar, brown sugar, cinnamon, salt and oats.
Cut the butter into the flour mixture with a pastry blender until crumbly.
Sprinkle topping over the peaches and place in the preheated oven for 45 minutes.
Serve warm and enjoy!
