Breakfast Burritos

1 package large tortilla wraps

4 eggs

1 package of frozen or fresh hash brown potatoes

ham, bacon or sausage

Shredded Mexican cheese mix

Salsa

Hot sauce, avocados (optional)

DSC01810Prepare eggs in a large mixing bowl.  Add a splash of milk, salt and pepper.

DSC01811Cook hash browns with a tablespoon of oil in a large saute pan over medium-high heat.

DSC01813When the potatoes are browned, push to one side and add the eggs.

DSC01814In a separate pan, cook desired breakfast meat.  We had some ham and sausage on hand.

DSC01815Start building the burritos.  Place a spoonful of potatoes close to one edge of a warmed tortilla.

DSC01817Add meat and eggs, cheese, hot sauce or salsa if desired.

DSC01818Start rolling by folding in the sides first.

DSC01820Continue rolling, keeping ingredients from falling out.

DSC01821Garnish with sliced avocados, salsa and sour cream.  These burritos can be made ahead and frozen.

Super Nachos

We had a mini Cinco de Mayo dinner the other night.  We made nachos with some left over turkey and margaritas to go with it.

2 cups cooked turkey or chicken, chopped

1 8 ounce block cream cheese

1 cup salsa verde

1 can black beans

tortilla chips

1 bag shredded Mexican style cheese -8 ounce

salsa

sour cream and chopped avocados for garnish

DSC01801Using a Kitchenaid mixer or hand mixer, blend meat, cream cheese and salsa verde until the meat is shredded.

DSC01802Preheat oven to 375 degrees.  Cover a large cookie sheet (9×13) with tortilla chips.  Add the black beans evenly over the chips.

DSC01803Add spoonfuls of the meat mixture as evenly as possible.  You may need to use your hands to spread the mixture.

DSC01804Cover all with shredded cheese.  Place in the oven for 20 minutes.

DSC01805Remove from the oven and add garnishes; salsa, sour cream and avocado.  Serve immediately.

Green Chili Carnitas Nachos

This is one of those “make it up as you go” recipes.  We don’t really have exact ingredients because you can add or delete ingredients you like on your nachos.

2 cups cooked pork carnitas meat or any cooked meat you desire

1 8-ounce cream cheese

1 cup green chili salsa

1 bag of tortilla chips

1 8-ounce bag shredded Mexican cheese blend

Toppings:

Guacamole

Salsa

Tomatoes

Green onions

Sour cream

DSC01582Take the first 3 ingredients: cooked meat, cream cheese and green salsa…

DSC01583Place all in a mixing bowl.  Using an electric mixer, mix ingredients together, shredding the meat.

DSC01584Preheat the oven to 375 degrees.  Cover a large baking sheet with tortilla chips.  Spoon meat mixture on top.

DSC01585Sprinkle shredded cheese over the top.  Place in the oven for 20 minutes.

DSC01587While the nachos are in the oven, work on the toppings.  We made a quick guacamole with fresh avocados, lemon juice, jalapeno, onion and tomato.  You can also use ready made guacamole.

DSC01588Remove nachos from the oven.  Add desired toppings: we put on salsa, fresh tomatoes, green onion, guacamole and sour cream.

Breakfast Burritos

Meg likes making a similar breakfast sandwich using flatbread.  We have some delicious homemade tomatillo salsa made from the tomatillos in our garden.  We decided to make a breakfast burrito, and I think she has a new favorite breakfast!

Ingredients:

1 flour tortilla

1 egg

1 sausage link

1 tomato, chopped

1 mini yellow or red pepper, chopped

splash of milk

tomatillo salsa

1/2 cup cheese of your choice

salt and pepper to taste

Cook the sausage in a small saute pan.

Break the egg into a small bowl, add milk, salt and pepper.

Whisk all together.

Pour the eggs into the saute pan heated to medium-high.

Add the chopped tomatoes and peppers and cook until done.

Soften the tortilla in the microwave for a few seconds.  Chop the sausage and place down the middle of the tortilla

Add the eggs, sprinkle grated cheese and top with tomatillo salsa.

Fold in the sides of the tortilla.

Then roll it up!

You can serve it with some sour cream and salsa on the side.

Steak Fajita Quesadillas

We had some leftover grilled carne asada from dinner last night.  Meg and I decided to make a lunch quesadilla with the grilled steak.  You could also substitute cooked chicken and it would be just as delicious.

Ingredients:

1 large tortilla wrap

2-3 slices cheese of your choice

Grilled steak (thinly sliced) and peppers

2-3 Tablespoons salsa

Sour cream or guacamole garnish

Place cheese slices over one half of the tortilla.

Cover the cheese with the cooked steak and peppers.

Spoon salsa over the steak.

Fold the tortilla in half .

Place on a panini grill or grill pan and cook until the cheese melts.

Cut the quesadilla into triangles.  Serve with sour cream or guacamole garnish.

Chicken and Corn Quesadillas with Guacamole

We had quesadillas for lunch today.  We tried putting some corn, chicken, cheese and salsa on a tortilla and grilled it.  We made a quick guacamole to put on top and voila!  There’s not really any exact ingredients, just use what you have on hand.  Here’s what we used:

Ingredients:

Frozen corn, pepper and black bean mix, defrosted

Tortillas

Cooked chicken

Cheese, we used Cotija

Green or red salsa

Place the corn/pepper mix on one half of the tortilla.

Place the cooked chicken over the corn.

Add the cheese

Spoon the salsa over the cheese.  Fold the tortilla over and place on a grill.

While the quesadilla is grilling, make a quick guacamole.  Smash one ripe avocado.

Squeeze the juice of 1/2 lemon over the avocado.

Add some chopped tomato and green onion, stir together.

Add some green tabasco sauce and salt to taste.

Remove the quesadilla from the grill and top with guacamole and sour cream.
